Well, I've been tracking F/OSS tools for "making" for a long time, and the list is getting rather unwieldy. If you're looking for anything specific, ask, and I'll see if I know of anything. Beyond that, a few favorites:

Pixel Prospector - a site that also maintains a huge list of resources for making games. Some of their lists overlap mine, but they're not exactly the same.

GIMP - photo manipulation and raster editor (kinda like Photoshop)

Inkscape - vector editor (kinda like Illustrator)

Scratch - game/animation tool, designed to teach programming to kids/non-programmers

Stencyl - another game-making tool. A bit more complex that Scratch, but also more powerful

Processing - electronic sketchbook based on Java. You have to write text-based code, but it's much simpler than using straight Java, and designed for artists.

For maker assignment and inspiration, I especially like

and then DIY.org for the maker assignments but also how they have gamified the assignments.
